Zucchini Bread

Serves: 12

   3 whole eggs (beaten)
   2 cups sugar
   1 cup canola oil
   2 cups zucchini (raw and grated)
   Teaspoon vanilla extract
   3 cups plain flour
   1/4 teaspoon salt
   1 teaspoon baking powder
   2 teaspoons cinnamon
   1 teaspoon baking soda
   1 cup nuts (optional)
   1 cup raisins (optional)




Beat eggs until fluffy. Add sugar, oil, zucchini. and vanilla. Mix well. Blend four, salt, baking powder, cinnamon and soda in a separate bowl. Now add gradually to the zucchini mixture. Pour into two greased loaf pans. Bake at 350°F for 50 - 60 minutes. Cool on rack.
