Banana Bread

Serves: 10

Very moist and quick and easy to make
Martha Boggs

   2 1/3 cups biscuit mix (Bisquick)
   3 mashed, ripe bananas (use medium size bananas)
   1 sugar
   1/3 cup canola oil
   3 slightly beaten eggs
   1 teaspoon vanilla extract
   1/2 teaspoon cinnamon (optional)
   1 cup chopped pecans

Mix all ingredients together and blend by hand for 1 minute. Put into greased loaf pan and bake for 55 - 60 minutes at 350F.
